Iain Burnett Highland Chocolatier’s signature chocolate is the award-winning Velvet TruffleTM which has received much acclaim from chefs. The recipe of intense single origin cocoa and Scottish cream can be infused with spices or tangy crushed fruit. These exquisite truffles have such an exceptional texture that they may be served as a pure ganache petit four simply dusted with red cocoa or in a host of other finishes. For visual impact truffles and pralines can be presented as thinly enrobed chocolates decorated with beautiful designs, corporate motifs, crests or initials. Rough cut pralines such as the Cocoa Nib or Orange Crunch offer a contrasting combination of textures. Bespoke flavours, textures and finishes are available on request.

As a ganache specialist, we can provide pastry chefs with Velvet TrufflesTM in a myriad of flavours, textures, sizes and finishes, or ultra-fine slabs of truffle to create their own desserts. We also offer the finest candied fruit dressed in single origin dark chocolate – juicy clementines, cherries with natural stalks, orange and pineapple slices.
