Iain Burnett has turned his training in chocolate sculpture to creating elegant chocolate wedding cakes which are individually designed to suit the special occasion. Traditional and modern styles can be adorned with chocolate roses, sugar flowers or fresh flowers to suit your theme. Colours can be introduced with ribbons around the cake. Inside is a moist rich chocolate sponge sacher torte with a multi-layered fudge icing surrounded by a layer of firmer ganache (truffle).
“The guests were stunned. How could such a spectacular and beautiful cake also be SO delicious! … And the Velvet Truffles™ added a luxurious touch that finished the dinner off perfectly! Thank you so much for all the extra effort you put in.” A & F
How to Order
First browse the chocolate cakes on our website in order to identify your style preferences.
You may also wish to visit The Highland Chocolatier’s showroom in Grandtully to see them life-size.
These styles may be combined to create your ideal cake.
Read this Cake Guide in full and then send the following information to the Chocolatier:
- wedding date
- number of guests or number of cake tiers you prefer
- names of cake styles which you are interested in
- type of outer finish (white, milk or dark chocolate / smooth or rough / colours / tiers together or separated by columns / fresh flowers, sugar flowers, or chocolate roses)
- possible days and times for a consultation
Orders should be placed well in advance to ensure that there is availability for your week.
Unless you are ordering a cake exactly as shown on the website, no quotations will be given or orders taken without a consultation in person. Please call to arrange an appointment.
Wedding Favours
As wedding favours you may choose any chocolates from Iain Burnett’s Gourmet Range, to be presented in the delicate Butterfly Box or to be supplied loose for your personal arrangement. Especially unique are his specialty Cocoa Dusted Velvet Truffles which are made-to-order with fresh cream and include a truffle fork for each guest, to be served with coffee as petit fours. Prices vary from £1 to £3 per guest.
Size
You may choose your cake size based on style, servings, or budget. For example you may feel that 4 tiers is more striking than 3, or that you wish to serve larger dessert-sized slices, or that your budget sets a limit. You may also want to keep the top tier for after-parties or freeze for an anniversary.
As a guide, the maximum number of normal taster-sized one by two inch slices from one of our classic 3 inch tall cake tiers is:
| Diameter | Slices |
| 12" | 56 |
| 10" | 38 |
| 9" | 32 |
| 8" | 25 |
| 6" | 14 |
| 12", 10", 6" | 108 |
| 12", 9", 6" | 102 |
Please note these numbers do not leave any cake for you to take away! And they are approximate – your caterer can cut the cake into any number you need, larger or smaller pieces.
Temperature & Transport
Temperature and transport do not usually pose any difficulties. Chocolate of this quality will not melt unless it is placed in direct sunlight. Simply keep it in a cool room, away from strong odours. We can offer delivery of the cake for £50 - £100 depending on location. However, this is usually an unnecessary expense - nearly all our customers have family or friends who are more than happy to pick up the cake on the morning of the wedding or the day before. The cake is created and packed so that it will travel safely with a gentle driver and is instantly assembled without expertise!
