Iain Burnett, who has become known as The Highland Chocolatier, is an award-winning artisan chocolatier of rare quality. He has trained under Master Chocolatiers of the Belgian, Swiss and French schools and now creates his own renowned range of fresh cream chocolate truffles, spiced pralines and spectacular chocolate wedding cakes.

He started working from his specially designed chocolate kitchen in Highland Perthshire to provide top Scottish chefs with gourmet chocolates of a quality unavailable elsewhere. Thanks to a suitably elegant packaging solution, he is now able to share with all his customers the outstanding textures and flavours created in this gourmet range of chocolates – freshly and elegantly hand-crafted with natural local ingredients at a price which is not elitist.

His father trained him in the kitchen from childhood to select from amongst the best of Scottish ingredients and exotic spices to create new flavours and textures. His passion for chocolate began in northern Japan on discovering another Maitre Chocolatier who had created a truffle of exquisite texture and taste, while using only natural and fresh ingredients. It took 3 years and over 120 fine adjustments for Iain to be satisfied with his own truffle recipe – the now famous Velvet Truffles™. In the process he unearthed what it means to be a genuine artisan chocolatier – techniques and processes that require a great deal of time, skill and experience. His truffles far exceed the standard of pungent, crumbly or oily truffles of most chocolatiers. But he is not complacent – continuously refining his recipes and striving for excellence.

He has spent several years training a dedicated team to work alongside him at an artisan level and is grateful for the complementary strengths they have brought to what is, at heart, a family business.
