To enjoy at its best, chocolate should be kept dry, cool (below 20oC/68oF) and sealed in its packing. Our chocolates are made from fresh, natural ingredients and timings vary. As a guide all our products will keep for a month, except Cocoa Dusted Velvet TrufflesTM which must be refrigerated and eaten within one week.

Every product description has a “Dietary” Tab which contains information about that product. To help narrow your specific needs, use the filters on the left of the screen.
Advice for Diabetics
For those who need to avoid sugar in their diet, it may be helpful to know that the 100% bar contains no sugar but all other products do contain natural sugar. What does the % marked on Chocolate mean?
Chocolate products must indicate the percentage of cocoa solids. This assures the consumer the proportion by weight of the product which comes from the cocoa bean. Higher percentages do not necessarily indicate the same level of bitterness as some cocoas are naturally sweeter than others. A chocolate made with 40% poor quality cocoa can be very bitter and a premium chocolate made with a 60% cocoa can be sweet and fruity.
How are the chocolates decorated?
Some of the chocolates have patterns which are produced by hand-embossing the molten chocolate. The intricate coloured designs are applied by transferring cocoa butter and food colouring onto the enrobed chocolates while they are still warm. Of course the decoration is edible!
How do I know the flavours?
An attractive and informative menu booklet is provided inside every box to help you appreciate the flavours of each chocolate type.
Is the chocolate Fairly Traded or Organic?
Iain Burnett Highland Chocolatier uses fairly traded cocoa and has been scrupulous to ensure that his source of chocolate is indeed fairly traded. Exceptional flavour and texture is our priority. There is currently no suitable premium quality coverture available which is certified Organic or certified Fairtrade.
