Iain recommends storing all his chocolates air-tight in a fridge in the summer, thus keeping the textures and flavours in tip-top condition.
However, the closer to body temperature when eaten, the more the famous velvet texture and exquisite flavours will reach your palate. So remember to take the box out a few hours before serving and resit opening it too soon to protect the precious contents from condensation.

Educate your taste buds. Learn about the different flavour notes of origin chocolate from around the world. Find out how Iain Burnett matched Sao Tome Chocolate to fresh Scottish cream when he created the exquisite Velvet Truffle Range. £10.00 per person, redeemable against purchase.
