A New Idea in Tourism

Iain Burnett Highland Chocolatier has unveiled a sweet new development in Scottish tourism, with the launch of chocolate tasting ‘flights’.

The first experience of its kind in the UK, Master Chocolatier Iain Burnett has developed a unique new range of interactive, audio-guided tastings as an introduction to his award-winning range of handmade chocolate truffles.

Offering a fun and informative insight into the varied tastes and textures of top-quality artisan chocolate, Iain Burnett Highland Chocolatier’s bespoke tasting flights will be available for chocolate lovers to sample in his Chocolate Lounge in Grandtully, Perthshire, or to take home to enjoy via an audio link.

Already popular in the wine and whisky industries, tasting flights offer a unique way to sample a range of different varieties and flavours in one session.

As visitors sit down to sample a ‘flight’ of Iain Burnett’s award-winning chocolates skilfully presented on a tasting mat, the listener is given an informative view of the Master Chocolatier’s experience as an acclaimed truffle specialist, followed by staged insights into five very different artisan chocolates.

Iain, who established his eponymous family business in 2005, hopes the uniqueness of his Chocolate Tasting Flights will help to boost tourism in Highland Perthshire.

Iain says:  “I’m delighted to announce the launch of our new ‘Chocolate Tasting Flights’, and I believe we are the first gourmet chocolatier in the UK to offer this unique experience. We’ve been trialling this over the past year, improving and refining the guided experience in response to feedback from our customers, so that when we officially launched them, they would be amazing.

“More and more people are now looking for an experience rather than a transaction, and the new Chocolate Tasting Flights bring together the special tastes and textures of the Velvet Truffles, combined with the educational experiences that we are trying to share through our Chocolate Lounge, exhibition, shop and kitchen viewing window. It’s a natural evolution that gourmet couverture chocolate, itself like fine wine, should have its own pure chocolate flight.

“I love to see people’s reactions when they first experience the Velvet Truffles and share with them why and how they are made. 3 More Awards for the Highland Chocolatier 🏆

Iain Burnett Highland Chocolatier, working from his specially designed chocolate kitchen in Grandtully, Highland Perthshire, has received an outstanding three awards from the Academy of Chocolate for his unique Velvet Truffles.  The Academy of Chocolate received record entries from over 46 countries, with Master Chocolatier Iain Burnett gaining the highest award in Scotland, with only one other Scottish chocolatier receiving an award.

Iain Burnett spent two years developing his latest two creations.  The Pure Caramelized Ganache with its uncommonly smooth texture is Iain’s ganache tribute to classic caramel – with creamy notes, evocative of perfectly browned butterscotch.  And the Sea-Salted Caramelized Velvet Truffle introduces an added dimension to the caramelized ganache as it finishes distinctively with small lingering bursts of sea salt.  Both received awards together with one of his first ever chocolates, the Cocoa Nib Praline.

Iain said, “it’s really encouraging that years meticulously selecting the right ingredients and best methods have been recognised on such an international level.” About his latest work, Iain says, “I really wanted to discover how to caramelize the ganache itself – not just another sugary caramel. I spent so long investigating the science of caramelization and so many old methods.  The breakthrough came by using a fresh cream and unique milk chocolate which both contain natural notes of caramel, then discovering how to caramelize the ganache itself.  From the excited responses I’ve had from testing it on some of the UK’s top chefs, I have a feeling that the salted caramel version is going to be very popular. I’ve found a way to add tiny sea salt crystals to make it ‘pop’ out beautifully.”

The New Caramel Velvet Truffles!

You may remember Iain Burnett accidentally caramelizing one of his Velvet Truffles with a twist of liquorice which, after a little refinement, went on to be awarded the Best Truffle in the World!

Inspired by the incredible response from chefs and customers, Iain has been working for the last 2 years to create, not a common sugary caramel, but a pure caramelized truffle.

He has finally been successful and is somewhat relieved to launch both a Pure Caramelized Ganache Velvet Truffle AND a Sea Salted Caramel Velvet Truffle.  Iain gives the classic fusion of caramel and chocolate his signature artisan spin, resulting in two jaw-dropping, show-stopping taste sensations!

About his latest creations, Iain says, “I really wanted to discover how to caramelize the ganache itself – not just another sugary caramel. I spent so long investigating the science of caramelization and so many old methods.  The breakthrough came by using a fresh cream and a milk chocolate, both containing notes of caramel, then discovering how to caramelize the ganache itself.  I have a feeling that the salted caramel version is going to be very popular, as the way I’ve found to add the sea salt makes it ‘pop’ out beautifully.”
