Cocoa Nib Praline

Once fermented, roasted and crushed, cocoa bean kernels are known as “nibs”.  Part way to becoming chocolate, cocoa nibs can be used as an ingredient just as they are, bringing a crunch of intense flavour. In the Cocoa Nib Praline Iain uses a base layer of marzipan incorporating cocoa nibs under gianduja, topped with dark chocolate, feathered with a milk chocolate pattern.

Newsletter – Late Summer Harvest and a Buzzing Chocolate Kitchen

raspberry-and-heather-honey0018-copyThe heather is in flower and beekeepers are harvesting this season’s honey – a scene which inspired Iain to create the White Raspberry Truffle.  This truffle celebrates local ingredients with the classic combination of crushed raspberry and creamy white chocolate ganache sweetened with Scottish heather honey.  Interesting fact for the whisky lovers – White Raspberry Truffles have been carefully chosen to pair perfectly with Ledaig 15 Year Old malt whisky.

langue-de-chatLangue de Chat, named after French biscuits of the same shape, are the refined way to appreciate pure chocolate. Featured in the Chocolatier’s Selection Box, the 70% Dark São Tomé version is paired with 1824 Macallan Gold and will soon be enjoyed alongside no fewer than 54,000 drams, in our biggest single order to date.

Healthy Options

This autumn Iain Burnett Highland Chocolatier, Grandtully will be celebrating its tenth anniversary and great changes are afoot to prepare for another exciting decade of gourmet chocolates.

On 5th of September, we will be transforming Legends Coffee House with a fresh approach to how it looks and what we serve.  We’re creating a more relaxed space with soft seating and more room for our visitors to kick back and make themselves at home.  Our customers will be able to enjoy excellent food and drinks in an atmosphere that’s more in tune with our passion – the creation of exquisite chocolates.

To this end, the coffee house will be renamed ‘Iain Burnett’s Chocolate Lounge,’ and we hope all our visitors will find it as exciting as we do.  In addition to all round improvements to the ambiance and the chocolate-themed menu, we are launching an experience that we believe will be unique in Scotland – our own Audio Tasting Tour.  Whether from near or far, you will be able to learn why our chocolates are world-beating from the man who has made it all possible – Iain Burnett.   Listen to Iain’s audio guide describing our business, explaining why the chocolates we make are so special, and then be conducted through a tasting of contrasting origin chocolate followed by a scrumptious tasting  of the chocolate truffles that have made Iain Burnett renowned in master chocolatier circles.

Your New Year Party with Champagne and Whisky Chocolates

Hilarie Burnett, our chair and a founder director, has played a lead role in these changes. “It has been challenging but fun to devise new ideas for what has become a popular stopping-off place in the IBHC Choc cakeUpper Tay Valley” she said.  “What was ‘Legends of Grandtully’ is now being reborn as something more restful, with inspirational touches from Iain’s artist wife Rachel.  An exciting addition will be the introduction of individual artisan chocolate tasting adventures using an audio guide.

“Many local people will know Janet Washington who has helped us with the new furnishings and colour schemes. We sincerely hope our customers will like what we are developing, which will be much more in keeping with our chocolate brand.  The familiar friendly team who are working so cheerfully with us will be looking after everyone just as before.”

We will be closing the coffee house area on 30th August and will reopen on September 5th relaunching our new look.  In the meantime we hope our regular customers will bear with us if service is a little more limited for a short time.  The Scottish Chocolate Centre, chocolate shop and gift shop in Grandtully, and of course our second chocolate shop in St Andrews, will be open as usual.

The highlight of 2015 was undoubtedly winning Gold at the International Chocolate Awards, recognising Iain as the creator of the Best Dark Truffle in the World.  Of course we all knew this already!  The coming year is no less exciting.  In October the business will be celebrating its tenth birthday and we are aiming to produce one million chocolates in 2016 – quite amazing when you consider that every Velvet Truffle is made by hand.

Earlier this year Selfridge’s launched their new “Chocolate Library” in the Confectionary Hall of their flagship Oxford Street store.   Four hundred bars were carefully selected from every corner of the world. This makes an eye-catching and dramatic full wall display. Browsing could take hours, but it is easy to find ours in their striking red envelopes right in the middle of the display.  Just like a library, the bars are displayed A to Z by “author” and there is a “chocarian” on hand to advise._MG_9936

Iain Burnett Highland Chocolatier offers a range of around twenty bars with new flavours being introduced throughout the year. Of these, Selfridge’s feature our Blonde White Chocolate, Chinese Ginger on Dark Chocolate, Cranberries and Apricot on Milk Chocolate, Almonds and Pistachio on Dark Chocolate and Peppermint on Dark São Tomé Chocolate bars.

No doubt you’re looking forward to spring as much as we are, more sunshine, longer days and walking without wellies. This year we’re going to be busier than ever. British Airways First has introduced us to customers as far afield as Australia, Russia and Kuala Lumpur. It’s amazing how far our chocolates now travel! We have a new shop opening in St Andrews, South Street very soon, right in the heart of the developing food quarter, so more of you can pop in and pick up your favourites.  At this time of year Iain’s chocolate moulding skills turn to creating giant Easter Eggs! These whoppers stand half a meter tall and can take up to 5kg of chocolate. Our Easter competition promises one lucky entrant a Giant Easter Egg to take home! Visit our shops in Grandtully or St Andrews where the eggs will be on display, or submit an entry by clicking here.

IMG_5795The Cocoa Dusted Velvet Truffle is Iain Burnett’s signature chocolate. With only natural ingredients it may sound simple, but it took Iain three years to perfect the recipe and achieve the exquisitely smooth texture.  The technique he has developed is top secret. Iain tried many sources and combinations before settling on a single variety of cocoa grown on the island of São Tomé and unblended cream from a single herd of Fresian cows grazed in the hills above Crieff in Perthshire.

We know how much you adore chocolate and we have started to share ideas of more ways to savour it in the form of food pairing suggestions and recipes such as the wonderful Rich Tomato and Chocolate Soup.  Our Malt Whisky and Chocolate Pairing is evolving fast.  We are proud to be aligned to several distilleries and can recommend the perfect chocolate to match no less than 36 whiskies.   Keep an eye on the Latest News section of the web-site or follow us on Facebook and Twitter for more regular suggestions. Hello and welcome to the latest newsletter from Iain Burnett Highland Chocolatier.

News and updates

In October I told you about the new website we were planning to launch and I am delighted to tell you that it is now live.  It is an exciting development and the new website is full of interesting current information about our chocolates and how they are made.  You can now appreciate a much wider selection of products and features appetising photography of the gourmet Velvet Truffles, Pralines, Bars and Dipped Fruit that you know and love.  Please take a look and tell us what you think.

We have been bursting to tell everyone our biggest news, just released to the press. We are extremely proud to be serving our multi-award winning chocolates to British Airways First passengers, from 1st December.  It has taken months of preparation from extending our production capacity, refining new equipment and training new chocolatiers to developing new chocolates and designing special lightweight boxes. Iain Burnett Highland Chocolatier can now truly be appreciated worldwide. Read more.

Not to let the grass grow under our feet, we have an exciting new challenge. Soon we will be opening a shop in St Andrews, Fife.  We can’t wait to get the keys and start putting our own stamp on the interior!

Events

We have had two busy months travelling the country to a growing number of Chocolate and Gourmet Food events.  We love to meet customers and to share the reaction when our uniquely smooth truffles are savoured for the first time.  It always surprises and delights the Chocolatiers when we tell them – it makes them very contented!

The highlight of the UK Chocolate Year is the Salon du Chocolat show in London.  There Iain delivered talks and demonstrations to enthralled audiences and we met hundreds of chocolate connoisseurs, including food writers and chefs.   Closer to home, we attended the Edinburgh Chocolate Festival, the first ever Perth Chocolate Festival and the Mearn’s Winter Food Fayre. You may have seen TV coverage of Julie Collier, our Commercial Director, or even read coverage in the press, or on social media.

Julie has been hosting private chocolate tastings too – most recently the intriguingly titled “Killer Heels and Cocktails” event in Aberdeen and the Aberdeen PA Winter Showcase at the AECC.  She was invited, along with a speaker from Visit Scotland, to “Thrive” a business networking evening in Glasgow and received some great comments.  If you are interested in organising a private chocolate tasting, please contact us.

Making Christmas Easy

As one of our customers recently remarked, Iain Burnett Highland Chocolatier can “take the stress of Christmas off your shoulders”.  We offer everything from stocking fillers, to ever popular boxes of gourmet chocolates and luxury chocolate hampers and can deliver worldwide. Our red packaging looks particularly festive and the chocolates taste divine.

After all, Christmas and chocolate go together!

Cocoa Dusted Velvet Truffles

This year for the first time the legendary Cocoa Dusted Velvet Truffles can be ordered on-line. They make the perfect chocolate lover’s gift and are a fantastic after dinner petit four.

Our shops in Grandtully, Perthshire and Bon Accord, Aberdeen are open right up to Christmas Eve and telephone or web orders for the UK can be accepted up to 20th December.

Already there is a sprinkling of snow, making the surrounding hills look beautiful, so why not visit us in Grandtully over the holidays.  The Coffee house serves warming spiced hot chocolate drinks and hearty bowls of homemade soups. We are open seven days a week, except Christmas Day, Boxing Day and New Years Day.

As summer turns to autumn and the Perthshire trees begin to change to glorious gold, it is time to bring a news update to all our loyal members and I extend a special welcome to our new Loyalty Club members.

News and updates
What a summer it has been!  Apart from the wonderful sunny weather, we have been exceptionally busy in the Chocolate Shop and Legends Coffee House in Grandtully.  It has been our pleasure to welcome back regular customers and many tourists from all over the world.  We have received most complimentary feedback on our Truffles from many of you and many foreign visitors from Europe and as far afield as Japan amongst many others.  News and feedback that our chocolatiers love to hear, thank you!

As a consequence of receiving Scotland Food & Drink Excellence “Product of the Year” award for 2013, we ran extra events during Scotland Food and Drink fortnight, which ended in ???.   The Coffee House laid on a “Chocolate Afternoon Delight”, the chocoholic’s perfect afternoon tea featuring freshly made scones with whipped cream and chocolate ganache, chocolate cake and a selection of chocolates accompanied by a hot chocolate drink. This continues to be offered on the menu – great to warm you up after a walk by the river.  Special escorted mini-tours round the Scottish Chocolate Centre were very well received. Everyone is amazed to find out how much care and effort goes into making gourmet chocolates.   If you are interested in coming on a tour, please contact us in advance.

I told you last time about the planned increase in production to meet demand from more and more corporate clients and discerning chefs.  Iain and his expanded team have been very busy training on the new specialist equipment brought from Italy and fine-tuning the setup to ensure that the quality meets the Highland Chocolatier’s exacting standards.   Rest assured, although production is increased, every chocolate is still lovingly made by hand and tastes superb.

Now that the summer season is over we have a little time to draw breath, and we are progressing with improvements.  We will be redecorating the exterior, the car park is to be resurfaced/re-lined and the car park entrance and Scottish Chocolate Centre will receive a revamp.  Let us know what you think the next time you visit.

Events
Chocolate Week, a celebration of chocolate, runs from 14th to 20th October.  At 11.3 0 a.m. on Monday to Thursday, Iain will be signing the book which he co-authored “I  Chocolate” which includes mouth-watering and delicious chocolate recipes from Masters of the Art of Chocolate.   While in Grandtully, haggle yourself a real bargain at the ever-popular Peddler’s Market which will be running in the Gift Shop on Thursday and Friday (17th/18th October).  Why not try our delicious Tomato and Chocolate soup and our Morangie Brie and Chocolate Panini in the Coffee House.

Competition
Thanks to everyone who entered our competition, which completed on 16th September. The answer was that as well as winning “Product of the Year”  the Highland Chocolatier also won Scotland Food & Drink Excellence “Retail Product – Confectionery & Snacking” category.   We had a draw for two winners – one for each of our two locations.  This Thursday Iain presents a beautiful chocolate hamper worth £85 along with a voucher for £30, to the two winners – Susan Anderson and Fraser Tunstall.  Mr Tunstall visited us here in Grandtully but lives in Arbroath and works in the oil industry in Aberdeen so he, along with Susan will be presented with their prize at the Bon Accord shop in Aberdeen.

We are really looking forward to launching a brand new website at the end of the month.  It will be fresh and modern and full of interesting information about Iain Burnett Highland Chocolatier and how we make gourmet chocolates. From then on it will be much easier to order online and to keep in touch, as there will be a blog and regular updates on Facebook and Twitter.  It is very exciting and it will be great to receive your feedback.
