Highland Chocolatier is Top of Truffle Tree

international-chocolate-awards-2016Two successive “Best in the World” awards is huge achievement for a small Scottish business.  For a second year running, Perthshire-based Master Chocolatier Iain Burnett received a prestigious gold accolade in the International Chocolate Awards at Olympia, London for one of his exquisite Velvet Truffles.

In competition with chocolatiers from all over the globe, his new Velvet Truffle – Caramel with a Hint of Liquorice topped the board – the only UK chocolatier to win such a distinction in the truffle and praline category this year.

Iain Burnett is based in the tiny village of Grandtully in Highland Perthshire, and the Highland Chocolatier has just celebrated its tenth anniversary. In recent years Iain’s special expertise in making both “naked” and enrobed (coated) chocolates has made his premises one of the area’s leading tourist attractions.

THE SCOTTISH CHOCOLATE CENTRE at Grandtully, opened in 2010, was the first and only venue of its kind in Scotland dedicated to the promotion of gourmet chocolate. Iain said of his latest success: “I’m really pleased that my new caramelised white Velvet Truffle has been selected. Liquorice is a flavour that sometimes gets a bad press but I’ve developed a chocolate that uses a gentle hint of liquorice with white chocolate that has been caramelised to complement it. The balance of chocolate and spices is combined to create a complex chocolate that is above all, delicious!”

The recipe and technique for producing Iain’s pure ganache truffle is a closely guarded secret because it is so unique. His Velvet Truffle – Dark São Tomé won gold at the International Chocolate Awards in 2015, marking it as The World’s Best Dark Chocolate Truffle.  Both his Velvet Truffle – Caramel with a Hint of Liquorice and his original  Velvet Truffle – Classic won Gold at the British section of the International Chocolate Awards in June 2016.

The Velvet Truffle Range has won Scotland Food and Drink Excellence Confectionery and Snacking Product of the Year.

The International Chocolate Awards are judged from over 40 countries with literally thousands of entries. They recognise the finest quality chocolate from around the world and reflect international tastes, offering a level playing field for chocolatiers worldwide. For example, the firm winning silver in the white truffle category came from the United States, and five bronzes were awarded to firms from the US, Mexico and Switzerland.

Chocolatiers at Iain Burnett the Highland Chocolatier are celebrating after winning three separate awards at the International Chocolate Awards.

After being awarded Best Dark Truffle in the world in October 2015 at the International Chocolate Awards, the Velvet Truffle has now been named Best Milk Truffle and Best White Truffle in Britain.

The grand jury also awarded gold to the Highland Chocolatier’s milk chocolate Velvet Truffle – Classic and the Velvet Truffle Caramel and Liquorice in the milk chocolate truffle and white chocolate truffle categories respectively, for the British National Competition of the International Chocolate Awards.

A unique additional award was given to the Velvet Truffle Caramel and Liquorice Velvet for the exceptional number of points it was awarded by the judging panel.

Both Velvet Truffles will now compete alongside entries from across the world to win the accolade of the best in the world.

Based at Grandtully in Highland Perthshire, Iain Burnett started working on the now famous Velvet Truffle over 10 years ago and is now Scotland’s most awarded chocolatier.

The chocolatier’s kitchen is situated next to the Scottish Chocolate Centre, which has become a four star attraction for locals and visitors who travel far to enjoy the coffee house, gift showrooms, gourmet chocolate shop and tours of the centre. Another shop operates in St Andrews and the chocolates are delivered to chefs and customers across the UK and internationally.

Iain Burnett, who prizes simple, natural ingredients in his chocolates, said: “Many years of work has gone into the Velvet Truffles so it’s fantastic that such a pure ganache – just rare cocoa and a very particular fresh cream without additives – is recognised by pastry chefs, restaurateurs and members of the international Grand Jury.

pic25The Velvet Truffle- Classic was the one chosen by Albert Roux himself – due to its incredible texture and purity his customers could enjoy just the flavours and textures of the cocoa and cream itself without any hindrance of preservatives or even a hard chocolate shell. With the Velvet Truffle, Caramel & hint of Liquorice, the caramelization of a high cocoa butter white chocolate ganache was one of those kitchen accidental eureka moments – it definitely has been a hit during our tasting trials!”

These pure un-enrobed Velvet Truffles were previously only available to top chefs but Iain Burnett the Highland Chocolatier developed a range for sale to the public as well as the catering trade.

The range includes seven flavours from those with white chocolate, lime with a hint of chilli to fruit based with raspberry and black pepper, to the decadently rich Dark Velvet Truffle made with São Tomé cocoa.

The grand jury has selected Iain Burnett Highland Chocolatier’s Velvet Truffle – Classic in the Milk Chocolate Ganaches or Truffles category and the Caramel and Liquorice Velvet Truffle14 in the White Chocolate Ganaches or Truffles category for the British National Competition of the International Chocolate Awards. These pure unenrobed truffles were previously only available to top chefs but Iain Burnett the Highland Chocolatier developed a range for sale to the public as well as the catering trade. Awarded gold in the World Chocolate Awards in 2015, Iain Burnett the Highland Chocolatier is launching its annual collection for Easter with a handmade range that includes single origin dark chocolate, ornate miniature eggs and caramel-toned milk chocolate.

Chocolate lovers can choose from little gems like chocolate chicks on a bed of eggs for children, to sophisticated Chinese ginger and dark São Tomé (single origin) chocolate eggs. Alongside the range of moulded Easter eggs, Iain Burnett has created boxes and bags of miniature eggs in crisp shells or filled with praline.

The Easter collection comprises a choice of seven large moulded eggs alongside miniature eggs and chocolate chicks including:

Highland Chocolatier Set to Hit a Million after Bumper Year

Iain Burnett the Highland Chocolatier is celebrating a bumper year after hand producing over 800,000 chocolates in 2015 and forecasting over a million to be produced in 2016 as they mark their tenth year of business.  Twelve tonnes of chocolate were produced this year by Iain Burnett and his team – the equivalent of the combined weight of over 156 people.

Demand for the luxurious chocolate, particularly their specialist truffle range, has grown with strong international demand from around the world due to their partnerships with British Airways First cabins worldwide. The chocolates have been exported as far afield as Japan, India and the Middle East.

Iain Burnett Highland Chocolatier, Scotland’s most awarded chocolatier, has been credited as creator of The World’s Best Dark Chocolate Truffle without any added flavourings!  Tens of thousands of chocolates from over 40 countries were judged by world class chefs, sommeliers and food experts to decide on this Gold International Chocolate Award.  A further two of Iain Burnett’s Velvet Truffle flavours received Silver Awards for The Velvet Truffle – Passion Fruit with a Touch of Mango and The Velvet Truffle – Raspberry & Black Pepper.

The International Chocolate Awards held their World Finals at The Chocolate Show in London, Olympia, Kensington to bring Chocolate Week 2015 to a close.

Already a winner of three awards for his unique Velvet Truffles in the UK finals earlier this year, Iain’s exquisite Velvet Truffles have now received this crowning recognition in the elite world of the very finest chocolate. International Chocolate Awards 2015 - Gold - British RGB

In the unique historical setting of The Merchant Adventurers’ Hall, York (the UK’s ‘Chocolate City’), Iain Burnett Highland Chocolatier added yet more accolades to the already burgeoning trophy cabinet.

The company based in Grandtully, Highland Perthshire was delighted to be awarded two Gold awards for the amazing The Velvet Truffle – Dark Sao Tome and for the exciting new The Velvet Truffle – Passion Fruit with a Touch of Mango – the latest to their Truffle Collection – along with a silver award for the The Velvet Truffle – Raspberry and Black Pepper – all “naked” Velvet Truffles.

Shortlisted to the British Regional Final, the company scooped top prize and was presented with a crystal trophy in the White Truffle Category for The Passion Fruit & Mango Velvet Truffle. Iain said “This Passion Fruit & Mango truffle is the result of a long search through 80 different fruits and recipes for the ultimate natural tang – I believe the passion fruit delivers, balanced in a velvety white chocolate ganache and rounded out with the fullness of ripe mango.”

Held every two years, the International Chocolate Awards is an independent competition recognising excellence in fine chocolate making. As the World’s only fully independent international fine chocolate competition, the aim is to support companies producing fine chocolate and chocolatiers, small companies and artisans working with fine chocolate.  By helping these markets to develop, the aim is to support the farmers who grow fine cacao.

Competitions are held in a growing number of countries and regions around the world, including Italy, the UK, USA, Germany, Scandinavia and other locations, with more competitions being held each year. Winners of the regional competitions are judged together at the World Final, which celebrates the best entries of the year. Judges include a wide range of experts, tasters, pastry chefs, food journalists, bloggers, sommeliers and chefs.


Amazing Year for Scotland’s Top Chocolatier

The team at Iain Burnett Highland Chocolatier are delighted to have added a significant haul to the growing trophy collection in 2014 which has been a phenomenal year.

The most amazing award was won in the international arena where the Highland Chocolatier’s hot chocolate won Best Hot Chocolate in The International Chocolate Awards held in Germany (awarded jointly with an Austrian Chocolatier).  A tremendous feat given the world stage and competition!
As if that was not stunning enough, a brand new award was launched in London back in November to mark the ever-growing popularity of salted chocolates and caramels.  The “Great British Salted Chocolate Challenge” set out to find the best salted chocolate product in the whole of the UK.  Iain, competing alongside 9 other chocolatiers – mainly from London – scooped top prize with his entry of the Salted Raspberry with Szechuan Pepper Salt.   He said “it was great fun to move beyond the common salted caramel – we experimented in the kitchen with Smoked Habanero Salt on lime truffle, Espresso Salt in mocha truffle and  the citrus of the Szechuan Pepper Sea Salt was a gastronomic hit with the Raspberry and Black Pepper Velvet Truffle.”

There can be no doubting the fact that this business is staking a claim on the world stage!

Significantly, The Perth Chamber Star Awards saw the business pick up The Independent Retailer of the Year trophy at its awards event at Crieff Hydro – also being a shortlisted finalist in Food & Drink category.  The Independent Retailer award highlights the success of the business and the team behind the scene at the Highland Chocolatier.  The lead judge described the winner stating “the judges felt that the people at the heart of this business set it apart from all others – the journey, passionate involvement, communication, ownership and delivery was outstanding. It was the level of involvement that the staff had and the extent to which information was shared that had most impressed.”  Surprised and delighted, Janice Kennedy, Managing Director of the business added “this is a significant award for the team and makes me feel immensely proud.  Those behind the scenes are often forgotten so this award celebrates the entire team who have worked so hard to provide a warm welcome and excellent service to every customer and in the process make this growing business a huge success.”
Perth Chocolate Festival entered its second year and marked the occasion with The National Chocolate Awards, and Iain was pleased to be asked to judge chocolate products.  In one of the few categories he did not judge, the company won Best Bar for their Salted Toffee Bar.
