Let’s be honest who doesn’t love chocolate? One of the most popular (and one of our personal favourite places to visit) is the award winning Iain Burnett Highland Chocolatier exhibition.  An award winning attraction that has won over 40 awards worldwide such as 2016 World’s Best White Chocolate Truffle at the International Chocolate Awards.

From the multimedia chocolate exhibition, to the must see chocolate shop and gift room, there’s lots to immerse yourself in during your visit here. On top of this, the entry to the whole of the attraction is free of charge.

What’s also great about the exhibition is you get to understand and get an idea of how the chocolate is produced as visitors have the opportunity to see the chocolatier’s at work during the production process.

Added to this, chocolate lovers can enjoy various drinks, cakes and of course, the world renowned chocolate in the Chocolate lounge of the attraction. A great place to relax and enjoy.

Gourmet Chocolate Tastings

Much more than a selection of chocolates, foodies will delight in this unforgettable gastronomic experience.  Sitting down to a “flight” of Iain Burnett’s exquisite and international award-winning chocolates laid out on a tasting mat, the listener is given an informative view of the Master Chocolatier’s experience as an acclaimed truffle specialist and then staged insights into each of five very different artisan chocolates.  Skilfully presented, Iain leaves room for us to come to our own conclusions based on our individual tastes.

Both highly informative and luxurious on the palate, we are given a chance to savour and unravel the incredible, complex flavours and textures of Iain Burnett’s signature Velvet Truffles and Velvet Pralines.  These astonishing chocolates have received over 40 awards including World Gold at the International Chocolate Awards – twice.

Honouring the Year of the Pig with Chocolate

The Chinese New Year, or Spring Festival, will be celebrated on 5th of February, welcoming in the Year of the Pig in 2019. Traditionally in the Chinese zodiac, the pig represents luck, good fortune, generosity and wealth.

For Chinese New Year, Iain Burnett is introducing the Chinese Tea Pairing Box – a companion box of Velvet Truffles perfect for serving alongside several beautiful, traditional Chinese Teas.

Robert Burns

January 25th is Burns Night – where Scotland’s most loved poet is celebrated all over the world.

Robert Burns wrote one of his most famous ballad’s just 5 miles from Iain’s Chocolate Kitchen in Grandtully.  During a visit to the Birks of Aberfeldy, then known as the Den of Moness, legend has it that Burns wrote the song after resting in a natural seat on the rock, just on the banks of the Birks.  

Iain also takes inspiration from the breathtaking beauty of the local surroundings, aiming to create poetry in another medium – chocolate.

Iain has specially created The Robert Burns Collection in honour of Scotland’s National Bard.

The New Caramel Velvet Truffles!

like you’ve never had it before…

You may remember Iain Burnett accidentally caramelizing one of his Velvet Truffles with a twist of liquorice which, after a little refinement, went on to be awarded the Best Truffle in the World!

Inspired by the incredible response from chefs and customers, Iain has been working for the last 2 years to create, not a common sugary caramel, but a pure caramelized truffle.

He has finally been successful and is somewhat relieved to launch both a Pure Caramelized Ganache Velvet Truffle AND a Sea Salted Caramel Velvet Truffle.  Iain gives the classic fusion of caramel and chocolate his signature artisan spin, resulting in two jaw-dropping, show-stopping taste sensations!

About his latest creations, Iain says, “I really wanted to discover how to caramelize the ganache itself – not just another sugary caramel. I spent so long investigating the science of caramelization and so many old methods.  The breakthrough came by using a fresh cream and a milk chocolate, both containing notes of caramel, then discovering how to caramelize the ganache itself.  I have a feeling that the salted caramel version is going to be very popular, as the way I’ve found to add the sea salt makes it ‘pop’ out beautifully.” 

Just in time for Black Friday, the new Caramel Velvet Truffles are available in mixed enrobed selection boxes, or as unenrobed Velvet Truffles.

Unveiling the World’s First Ruby Velvet Truffle

The Fourth Type of Chocolate

Iain is announcing a world first with the unveiling of a Ruby Velvet Truffle!

Recently launched after a decade of development, ruby chocolate is being hailed as the “fourth type of chocolate”. So named for its natural pink colour and fruity flavour, it has so far only had limited release in select countries—making it all the more tantalising for consumers, chefs and chocolatiers alike.

Comprised of a highly unique combination of flavour compounds, naturally present in the beans, ruby chocolate brings a new spectrum of possibilities to Iain’s gourmet chocolate kitchen. Not much has been revealed about how ruby chocolate has been developed, only that there are precursors in some cacao beans that, handled carefully, produce a fruity pink chocolate.

A World of Possibilities

Excited by the arrival of ruby chocolate samples in his kitchen, Iain has been eager to experiment with new tastes and pairings, explaining “Ruby chocolate acts somewhere between white and milk chocolate, with a creamy yet tangy berry note. For a chocolatier, the unique flavour notes are fun to work with and open a world of possibilities.”

Inspired by a recipe he created for the Queen’s birthday using Her Majesty’s own blackcurrants, Iain realised the ruby chocolate would be a perfect match, “The natural creaminess yet acidic fruitiness of the ruby is beautifully accentuated with the tang of crushed blackcurrants for a powerful experience – and a vibrant burst of violet colour! I think it will be awhile until the full potential of the ruby bean is reached. In the meantime, we have just begun to have fun with this, starting with The Ruby Velvet Truffle.
