Proudly presenting…

Due to popular demand, Iain Burnett is proud to present: the Sea Salted Toffee Dark Bar!
Iain’s Salted Toffee Milk Bar has been a best-seller since its introduction to the range, and Iain is pleased to now offer the same magnificent handcrafted tablet for dark chocolate lovers.

Celebrating World Chocolate Day!

Chocolate, We Think The World of You!

While every day is Chocolate Day at Iain Burnett Highland Chocolatier, the 7th of July marks the annual celebration of World Chocolate Day.  A day when we can all joyfully doff our caps to one of the most beloved foods on the planet. Of course there are countless ways to enjoy the day, but here are a few suggestions from Iain’s corner of the world.

Simply the Zest!

Coinciding with World Chocolate Day, Iain is offering a new Summer Selection Box. A tantalising medley of fruit and floral Velvet Truffles. A wonderful complement of flavours for the long, hot summer days.

Encircled in a white and gold box, these brightly coloured gourmet treats are certain to make your taste buds sparkle like sunshine!

Take A Dip

In this hot weather, let your palate do the travelling, with pineapples, clementines, lemons and cherries.

Iain’s selection of dipped fruit is the ultimate way to savour summer.  Fine fruit, delicately candied over days to retain their natural sweetness and juiciness, then hand-dipped and dressed in Iain’s gourmet chocolate.

Paint the Town Red…

With Iain’s luxury Red Cocoa!

100% cocoa powder, crafted through a careful process of fermentation, roasting and grinding.

Rich and robust, red cocoa adds an aromatic, bittersweet punch to both savoury and sweet recipes.  Wonderful for those on the lookout for more ways to integrate chocolate flavours into their lives–on World Chocolate Day and every day!

Happy World Chocolate Day from Highland Perthshire,

Strawberry Fields Forever

A Divine Taste of Scottish Summer

Scottish summertime heralds the arrival of many wonderful things — breathtaking landscapes in full bloom, longer days punctuated with lavender twilights, glittering sunshine (fingers crossed), and strawberry season!

What better way to savour this versatile, heavenly fruit than by enjoying it with one of its most consonant companions: chocolate. Iain has meticulously crafted a selection of exquisite products combining crushed strawberries and his signature gourmet chocolate– each a delectable homage to the unfolding summer season.

Limited Edition Strawberry & Star Anise Velvet Truffle

Nothing could be a more decadent celebration of the beloved summer berry than Iain’s signature “naked” edition of unenrobed Strawberry Velvet Truffles. Infused with real strawberries and sweet star anise, and currently on a promotion of 30% off, this award-winning milk chocolate truffle has never been more tempting.

Previously only available to Michelin Star and AA Rosetted Chefs, Iain has made a strictly limited number of his fruit infused pure ganache truffles in box sizes of 6, 12 and 18. They are only available while stocks last, so have your truffle forks at the ready and don’t miss this taste experience!

Strawberries & Cream : A Love Match

With Wimbledon just around the corner,  The Highland Chocolatier is once again serving up the popular Strawberries and Cream selection box.  A beautifully ornate white and gold round box, filled with Strawberry Velvet Truffles and luxurious White Velvet Hearts.

Winner of the Great Taste Gold Award, the Strawberry Velvet Truffle blends pure fruit coulis ganache with a touch of star anise.  For the cream: Iain’s White Velvet Hearts mix rich white chocolate ganache with decadent triple Madagascan vanilla, delicately encased in a heart shaped shell.

A stunning take on the quintessential summer dessert.

Rolling in Berries

Wonderfully textural and pleasingly tart, Iain’s satchels of whole raspberries and strawberries rolled in white chocolate make an ideal treat — a sweet sidekick for rugged summer hikes and serene garden parties alike.

A Prestigious Alliance

Iain Burnett Highland Chocolatier has received the honoured invitation to join Walpole, the prestigious alliance of Britain’s leading luxury brands.

Walpole boasts an impressive tradition of supporting excellence in British craftsmanship, innovation, design, style, and impeccable service, and includes such illustrious names as Rolls Royce, Mulberry, Wedgwood, Claridges, Jimmy Choo, Bentley, The Savoy, The Dorchester, Tiffany, Harrods, Selfridges and Fortnum & Masons among others.

Walpole CEO, Helen Brocklebank, said “I’m delighted to welcome the Highland Chocolatier as a member of Walpole. Walpole represents the finest luxury brands in the British Isles, and Iain’s quest for perfection and his attention to detail in chocolate making, from sourcing the finest cream from a single herd of Perthshire Friesians to tracking down rare cocoa from São Tomé, demonstrates a remarkable commitment to the pursuit of excellence.

Striving for Excellence

Among such distinguished creators and brand leaders, Master Chocolatier Iain Burnett is a natural addition. Twice winning the World Gold at the International Chocolate Awards for his unique Velvet Truffles, Iain is Scotland’s most awarded chocolatier. As a truffle specialist, Iain has carved a unique niche with other culinary masters, supplying Michelin Star chefs with world class petits fours, Master Distillers with chocolate pairings, and some of Britain’s must luxurious hotels with stunning bespoke chocolates for their guests and clients.

Walpole’s devotion to excellence could not be more in keeping with Iain’s personal ethos. Asked for his definition of luxury, Iain replies “I think striving for excellence on a daily basis is a route to creating genuine luxury – far above average and something an artisan is proud of.”

Love Affair with British Luxury

On receiving the news Iain responded “Becoming a Walpole member is a tremendous honour. I greatly value the opportunity to learn from association with such like-minded members, many of whom started as family businesses themselves.”

As Walpole’s Member Guide explains, “The world’s love affair with Britain’s luxury brands shows no signs of abating, and Walpole’s 200 members have never been more valued or desired… Walpole supports the luxury sector through a strategic programme of events, mentorship, thought leadership, communications and political and media engagement.”

St. Andrew’s Day with Scotland’s Most Awarded Chocolatier

St. Andrews Day at Iain Burnett The Highland Chocolatier

The 30th of November is St Andrew’s Day. A day when Scots and Scots-at-heart pay homage to the patron saint of Scotland, and celebrate our national day.

St. Andrew’s Day is usually commemorated with special events and celebrations honouring Scottish heritage, history and culture.

What better way to mark the day than by indulging in artisan chocolate, handmade by Scotland’s most awarded chocolatier.

The White Raspberry Velvet Truffle was crafted by Iain as a tribute to his Scottish roots, and is modelled after the traditional Scottish dessert, Cranachan.

Typically this classic dessert is a mixture of whipped cream, whisky, honey and fresh raspberries, with toasted oatmeal.

The White Raspberry Velvet Truffle blends only fresh Scottish ingredients, combining crushed raspberry and creamy white chocolate ganache, and sweetened with Scottish heather honey.

While none of Iain’s chocolates contain alcohol, they are expertly matched to pair beautifully with a number of favourite whiskeys and gins.

Iain recommends the Ledaig 15 Year Old malt whisky as the companion to The White Raspberry Velvet Truffle.

Halloween and Chocolate: A Frightfully Thrilling Mix

Originating as the Celtic festival of Samhain, where Scots would light bonfires and wear costumes to ward off ghosts, Halloween is now inextricably linked with candy and sweets. However, the intoxicating brew of Halloween and chocolate is actually a relatively recent one.

As traditions from various cultures began to mix, Halloween became the one night of the year where pranks would be tolerated, where tricks ranging from playful to ghoulish might ensue.

The more modern form of trick or treating dates back to the 1930s and 40s, when costumed children going door to door would spirit away with a wide variety of treats, ranging from fruits and nuts, to toys and coins.

In the 1950s, spotting a diabolical opportunity to boost candy sales in the autumn season, candy companies cackled at the chance to cast their spell over the holiday, offering an affordable and convenient reward for witches and wizards appearing on doorsteps.

By the 1970s, chocolate and candy was regarded as the official Halloween fare, and today, approximately £1.5 billion of chocolate is sold at Halloween.

Whether you’re braving the eerie night, or warlocking your doors and curling up against the cold, Iain wishes you a very Happy Halloween.

Elements for a Devilish Potion

For the ultimate Halloween hot chocolate, use some of Iain’s Dark Hot Chocolate flakes mixed with hot milk.
Add in some chili or cinnamon to taste, and a dash of black food colouring for a bewitching brew.

Or, combine some of Iain’s White Hot Chocolate with pumpkin spice mix, if available, or mint.
Stir in some green or orange food colouring for a wickedly warming Halloween treat.

Stocking Fillers for Chocolate Loving Kids

Thursday, December 3rd, 2015

Chocolate is such a wonderfully nostalgic treat, and it played a big part in many of our childhoods. How many children still rush downstairs on Christmas morning to unwrap the first hanging chocolates from the tree! Luckily, Highland Chocolatier has a range of award-winning sweets to delight any child this festive season. Why not give them an extra treat this Christmas or pad out their stockings with our range of delectable chocolates, crafted specially with little ones in mind?

Classic chocolate buttons

Brighten up any snowy morning with a cone of our classic buttons in strawberry, milk or white. Slip them under their pillow, into their stocking, or hang on the tree for extra festivity. Gran and Grandad can earn some extra points by turning up with these in hand, or simply mix together in a big bowl with some fruit for the kids to munch on while they watch their favourite Christmas movie. Guaranteed to put a smile on their faces, their nostalgic packaging and moreish taste may prove an excellent appetiser for the turkey – if Mum and Dad don’t eat them all!

Prehistoric treats

Is there a budding palaeontologist in your family? How about that one nephew who watches Jurassic Park on repeat? Little tyrannosaurus fans will be delighted with our amazing Chocolate Button Dinosaur, available in milk, white and strawberry flavours (pictured right). Gourmet buttons packaged in a sweet reusable dinosaur-shaped container which can be used later to store treasured fossils, be painted like a real T-rex, or even as a mould to make your own chocolatey dinosaur treat!

Penny sweets

A loveable dinosaur isn’t the only chocolate creature creation on our Christmas list. Many a mickle macks a muckle, as we say in Scotland, and you too can help your child save for rainy days with our adorable and delicious Piggy Bank. Full of our beautifully made buttons, the container slips easily into a stocking, makes an excellent last-minute gift and also doubles as a real piggy bank to carefully store away coins.

Milky Bar Kid

Who remembers the old adverts? Most likely not the young ones in your life, which is a crying shame! Before you start searching around on YouTube for that catchy jingle, introduce them to the joy of white chocolate with our Blonde Chocolate Bar. A classic white chocolate bar with a smooth, creamy flavour, it’s good enough to squabble over, so make sure you stock up on enough! Its irresistible combination of São Tomé cocoa butter, Madagascan vanilla and fresh Scottish cream is likely to appease even the pickiest sprout at the table.

A treat before bedtime

When it all winds down on Christmas Day, what’s better to top off the evening than with a hot, steaming mug of real hot chocolate? Get the kids involved and let them customise their own creations with marshmallows, sprinkles and lashings of cream, all resting on a base of our incredibly tasty Dark Hot Chocolate Flakes (pictured right) for a real winter’s feast. Simply mix into hot milk for a beautifully smooth mug of hot chocolate, or cater for milder tastes by mixing in some of our White Hot Chocolate Flakes too. Endless combinations can be made with orange, vanilla or mint essence – don’t forget to sprinkle some more on top!

Christmas and chocolate go hand in hand. Some children are notoriously difficult to buy for, but rest assured any sweet-toothed youngster will be delighted with our range of chocolates. If you also need something for the man in your life, we have a range of gifts for him as well!
