Highland Chocolatier Awarded Hat Trick by Academy of Chocolate

May 2nd, 2019

3 More Awards for the Highland Chocolatier 🏆

Iain Burnett Highland Chocolatier, working from his specially designed chocolate kitchen in Grandtully, Highland Perthshire, has received an outstanding three awards from the Academy of Chocolate for his unique Velvet Truffles.  The Academy of Chocolate received record entries from over 46 countries, with Master Chocolatier Iain Burnett gaining the highest award in Scotland, with only one other Scottish chocolatier receiving an award.

Iain Burnett spent two years developing his latest two creations.  The Pure Caramelized Ganache with its uncommonly smooth texture is Iain’s ganache tribute to classic caramel – with creamy notes, evocative of perfectly browned butterscotch.  And the Sea-Salted Caramelized Velvet Truffle introduces an added dimension to the caramelized ganache as it finishes distinctively with small lingering bursts of sea salt.  Both received awards together with one of his first ever chocolates, the Cocoa Nib Praline.

Iain said, “it’s really encouraging that years meticulously selecting the right ingredients and best methods have been recognised on such an international level.” About his latest work, Iain says, “I really wanted to discover how to caramelize the ganache itself – not just another sugary caramel. I spent so long investigating the science of caramelization and so many old methods.  The breakthrough came by using a fresh cream and unique milk chocolate which both contain natural notes of caramel, then discovering how to caramelize the ganache itself.  From the excited responses I’ve had from testing it on some of the UK’s top chefs, I have a feeling that the salted caramel version is going to be very popular. I’ve found a way to add tiny sea salt crystals to make it ‘pop’ out beautifully.”

Saying a Special Thank You on Mother’s Day

March 22nd, 2019

Saying a Special Thank You on Mother’s Day – for Everything a Mother gives

Even the youngest among us can understand why we give chocolate as a gift – confectionery is always a treat, and a box of Iain’s handmade Velvet Truffles is a particular luxury. We can’t blame mums for wanting to keep such a gift to themselves (although there is always the hope that the box will be shared)…but what if you want to say “thank you” in a more special way?

A recent survey looked at all the different ways in which mums provide support – love, time and attention that we so often take for granted. The average Scottish mum, for example, has around 20 deep and meaningful heart-to-hearts with her kids every year (the highest in the UK).

She’ll be woken up in the night every month, she spends an hour and a half each week ferrying the children around, and she takes time off of work every year (2.5 days) to look after an ill or hurt child. Across one childhood, she might spend as many as 112 days watching her young ones at sports and activities.

Say thank you for each and every bit of support. Recognise mum’s love with a heart-shaped selection, of pralines, truffles and marzipans (which she doesn’t need to share!). Or, help her to create a month of relaxing moments with our Chinese teas paired selection. For something stronger, find the perfect match to a special single malt, and deliver both as an indulgent gift.

For the ultimate thank you, give mum back some of the time she has shown you – why not create a day dedicated just to her? Take her out, treat her to the theatre, or cook her a thoughtful dinner, filled with her favourites – and finish up with our tasting masterclass for a unique end to the evening. Perfect for foodies, it is an ideal way to show your mum how well you know her and are grateful for a lifetime of love.

Reasons to Visit Iain Burnett…

February 14th, 2019

We recently did a collaboration with myhotelbreak on why their guests should visit us here at Iain Burnett Highland Chocolatier. Check out what they discovered:

Some of the best hotel experiences involve having interesting and must see attractions nearby. For guests looking for hotels in Perthshire we highly recommend the wonderful Iain Burnett Highland Chocolatier exhibition located in picturesque Grandtully, Perthshire.

Let’s be honest who doesn’t love chocolate? One of the most popular (and one of our personal favourite places to visit) is the award winning Iain Burnett Highland Chocolatier exhibition.  An award winning attraction that has won over 40 awards worldwide such as 2016 World’s Best White Chocolate Truffle at the International Chocolate Awards.

From the multimedia chocolate exhibition, to the must see chocolate shop and gift room, there’s lots to immerse yourself in during your visit here. On top of this, the entry to the whole of the attraction is free of charge.

What’s also great about the exhibition is you get to understand and get an idea of how the chocolate is produced as visitors have the opportunity to see the chocolatier’s at work during the production process.

Added to this, chocolate lovers can enjoy various drinks, cakes and of course, the world renowned chocolate in the Chocolate lounge of the attraction. A great place to relax and enjoy.

 Let’s find out more…

Gourmet Chocolate Tastings

Both highly informative and luxurious on the palate, we are given a chance to savour and unravel the incredible, complex flavours and textures of Iain Burnett’s signature Velvet Truffles and Velvet Pralines.  These astonishing chocolates have received over 40 awards including World Gold at the International Chocolate Awards – twice.

Chinese New Year 2019

January 10th, 2019

Honouring the Year of the Pig with Chocolate

The Chinese New Year, or Spring Festival, will be celebrated on 5th of February, welcoming in the Year of the Pig in 2019. Traditionally in the Chinese zodiac, the pig represents luck, good fortune, generosity and wealth.

For Chinese New Year, Iain Burnett is introducing the Chinese Tea Pairing Box – a companion box of Velvet Truffles perfect for serving alongside several beautiful, traditional Chinese Teas.

Iain’s ornate magnetic boxes tie seamlessly into the colours of Chinese New Year – red for good fortune and joy, and gold for beauty and prestige – making them a stunning gift option for those celebrating the occasion around the world!

Scottish Take on Chinese Style

Traditionally, sweet candied fruits or vegetables are placed in cups of tea at Chinese New Year. Iain offers a Scottish spin on this tradition, with his range of gourmet chocolate dipped fruits – orange sunrises, lemon slices, cherries and whole clementines.

Chinese Ginger

Ginger is considered a strengthening food in Chinese culture – Confucius insisted on having ginger with every meal. Fiery Chinese ginger on dark chocolate surely qualifies. Equally enjoyable in either handmade bars or florentines

Burns Night – 25th January

January 3rd, 2019

“The Hills of the Highlands for ever I love…”

Robert Burns

January 25th is Burns Night – where Scotland’s most loved poet is celebrated all over the world.

Robert Burns wrote one of his most famous ballad’s just 5 miles from Iain’s Chocolate Kitchen in Grandtully.  During a visit to the Birks of Aberfeldy, then known as the Den of Moness, legend has it that Burns wrote the song after resting in a natural seat on the rock, just on the banks of the Birks.

Iain also takes inspiration from the breathtaking beauty of the local surroundings, aiming to create poetry in another medium – chocolate.

Iain has specially created The Robert Burns Collection in honour of Scotland’s National Bard.

The Robert Burns Collection

The Robert Burns Collection showcases the Cranachan Velvet Truffle – inspired by the traditional Scottish dessert – featuring crushed raspberries and white chocolate ganache with Scottish heather honey.

Wishing you a wonderful Burns Night from Highland Perthshire!

The New Caramel Velvet Truffles!

November 23rd, 2018

like you’ve never had it before…

You may remember Iain Burnett accidentally caramelizing one of his Velvet Truffles with a twist of liquorice which, after a little refinement, went on to be awarded the Best Truffle in the World!

Inspired by the incredible response from chefs and customers, Iain has been working for the last 2 years to create, not a common sugary caramel, but a pure caramelized truffle.

He has finally been successful and is somewhat relieved to launch both a Pure Caramelized Ganache Velvet Truffle AND a Sea Salted Caramel Velvet Truffle.  Iain gives the classic fusion of caramel and chocolate his signature artisan spin, resulting in two jaw-dropping, show-stopping taste sensations!

About his latest creations, Iain says, “I really wanted to discover how to caramelize the ganache itself – not just another sugary caramel. I spent so long investigating the science of caramelization and so many old methods.  The breakthrough came by using a fresh cream and a milk chocolate, both containing notes of caramel, then discovering how to caramelize the ganache itself.  I have a feeling that the salted caramel version is going to be very popular, as the way I’ve found to add the sea salt makes it ‘pop’ out beautifully.”

Just in time for Black Friday, the new Caramel Velvet Truffles are available in mixed enrobed selection boxes, or as unenrobed Velvet Truffles.

Iain can’t wait for you to try them!
