The Fourth Type of Chocolate

Iain is announcing a world first with the unveiling of a Ruby Velvet Truffle!

Recently launched after a decade of development, ruby chocolate is being hailed as the “fourth type of chocolate”. So named for its natural pink colour and fruity flavour, it has so far only had limited release in select countries—making it all the more tantalising for consumers, chefs and chocolatiers alike.

Comprised of a highly unique combination of flavour compounds, naturally present in the beans, ruby chocolate brings a new spectrum of possibilities to Iain’s gourmet chocolate kitchen. Not much has been revealed about how ruby chocolate has been developed, only that there are precursors in some cacao beans that, handled carefully, produce a fruity pink chocolate.

A World of Possibilities

Excited by the arrival of ruby chocolate samples in his kitchen, Iain has been eager to experiment with new tastes and pairings, explaining “Ruby chocolate acts somewhere between white and milk chocolate, with a creamy yet tangy berry note. For a chocolatier, the unique flavour notes are fun to work with and open a world of possibilities.”

Inspired by a recipe he created for the Queen’s birthday using Her Majesty’s own blackcurrants, Iain realised the ruby chocolate would be a perfect match, “The natural creaminess yet acidic fruitiness of the ruby is beautifully accentuated with the tang of crushed blackcurrants for a powerful experience – and a vibrant burst of violet colour! I think it will be awhile until the full potential of the ruby bean is reached. In the meantime, we have just begun to have fun with this, starting with The Ruby Velvet Truffle.

Cold Makes Us Nostalgic and Nostalgia Makes Us Warm

Christmas and New Year for me has always been the priceless time when family and friends get together and bask in the glow of the season. How many priceless memories centre around this time of year for each of us–the atmosphere, the anticipation, and the joy. Since my family opened the business 12 years ago, Christmas has become the one week of the year when I close the chocolate kitchen, and that I get to be on holiday at the same time as my brother, Calum, who is my Senior Chocolatier.

For me it is also a particularly beautiful and jovial time in Scotland— especially with the colourful celebration of Hogmanay to brighten up the bleak winter weather. Above all, the season offers a poignant chance to laugh, reflect, and share from the heart—and in that spirit, I offer some Christmas selections, and my warmest wishes for a lovely holiday.

The 30th of November is St Andrew’s Day. A day when Scots and Scots-at-heart pay homage to the patron saint of Scotland, and celebrate our national day.

St. Andrew’s Day is usually commemorated with special events and celebrations honouring Scottish heritage, history and culture.

What better way to mark the day than by indulging in artisan chocolate, handmade by Scotland’s most awarded chocolatier.

The White Raspberry Velvet Truffle was crafted by Iain as a tribute to his Scottish roots, and is modelled after the traditional Scottish dessert, Cranachan.

Typically this classic dessert is a mixture of whipped cream, whisky, honey and fresh raspberries, with toasted oatmeal.

The White Raspberry Velvet Truffle blends only fresh Scottish ingredients, combining crushed raspberry and creamy white chocolate ganache, and sweetened with Scottish heather honey.

While none of Iain’s chocolates contain alcohol, they are expertly matched to pair beautifully with a number of favourite whiskeys and gins.

Iain recommends the Ledaig 15 Year Old malt whisky as the companion to The White Raspberry Velvet Truffle.

An Exclusive Velvet Truffle to Celebrate the Queen’s 90th Birthday

We’re celebrating Her Majesty the Queen’s 90th Birthday with an exclusive recipe: Sandringham Velvet Truffle.   Having established a professional relationship with Mark Flanagan, the Queen’s chef at Buckingham Palace, Iain Burnett Highland Chocolatier is extremely proud and privileged to have been supplied with a small quantity of blackcurrants grown in the Queen’s own garden at Sandringham House, Norfolk.  This uniquely special ingredient then became the inspiration for a truly exciting recipe.

Iain set to work immediately to create a Velvet Truffle worthy of the occasion and fit to be presented as a birthday gift to the Queen herself.   The multi-award winning truffle specialist and maker of the World’s Best Dark Chocolate Truffle, combined his skill and expertise to create a classic flavour that he was assured the Queen would enjoy.  Having come up with the concept and refined a recipe based on a tangy blackcurrant puree, white chocolate ganache and honey, Iain had the brilliant idea to source ingredients from all four countries of the realm.  The resulting Sandringham Velvet Truffle uses fresh Scottish cream from Perthshire, butter from Northern Irish Dales Farms’ pastures, wildflower honey from Hilltop Farm in mid-Wales and of course the blackcurrants from England.   The distinctive truffles are exquisitely smooth, as you would expect from the Highland Chocolatier kitchen.  The ganache is enrobed in single origin Dark Sao Tome couverture chosen to enhance the red fruit notes and each truffle is decorated with a regal emblem.  They will be presented to the Queen by her chef, on behalf of Iain Burnett Highland Chocolatier for her birthday.

Iain said, “I’m honoured to develop these truffles from the Queen’s own blackcurrants.  Discussions with the Queen’s chef were an inspiration and great kindness in sharing a personal store from Sandringham made this possible.  They are exceptionally full bodied and tangy enough to balance well with fresh cream – even the truffle itself is a vibrant Royal purple! The Queen is already a fan of our chocolate dipped cherries and I hope these will also meet with regal approval!”
